Ingredients:
- 2 lbs butternut squash, peeled and cubed into 1-inch pieces
- 1 lb smoked Italian sausage, sliced into ¼-inch rounds
- 1 large red onion, cut into 1-inch wedges
- 3 tbsp extra-virgin olive oil
- 1 tbsp maple syrup
- 1 tsp dried rosemary or thyme
- 1 tsp kosher salt
- ½ tsp black pepper
- 2 tbsp fresh parsley, chopped
- 1 tbsp apple cider vinegar
Instructions:
- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
- Peel the butternut squash and cut it into uniform 1-inch cubes.
- In a large mixing bowl, combine the cubed squash, sliced sausage, and red onion wedges.
- Pour the olive oil, maple syrup, dried herbs, salt, and pepper over the mixture. Toss until all ingredients are evenly coated.
- Spread the mixture onto the prepared baking sheet in a single layer. Roast for 25–30 minutes, tossing once halfway through, until the squash is fork-tender and the sausage is browned.
- Remove from the oven and immediately drizzle with apple cider vinegar and sprinkle with chopped fresh parsley.
