Ingredients:

  • 2 lbs butternut squash, peeled and cubed into 1-inch pieces
  • 1 lb smoked Italian sausage, sliced into ¼-inch rounds
  • 1 large red onion, cut into 1-inch wedges
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp maple syrup
  • 1 tsp dried rosemary or thyme
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp apple cider vinegar

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. Peel the butternut squash and cut it into uniform 1-inch cubes.
  3. In a large mixing bowl, combine the cubed squash, sliced sausage, and red onion wedges.
  4. Pour the olive oil, maple syrup, dried herbs, salt, and pepper over the mixture. Toss until all ingredients are evenly coated.
  5. Spread the mixture onto the prepared baking sheet in a single layer. Roast for 25–30 minutes, tossing once halfway through, until the squash is fork-tender and the sausage is browned.
  6. Remove from the oven and immediately drizzle with apple cider vinegar and sprinkle with chopped fresh parsley.
