Ingredients:

  • 2 lbs butternut squash, peeled and cubed into 1-inch pieces
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 3 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1/4 tsp smoked paprika

Instructions:

  1. Preheat your oven to 400°F (200°C) and line two large rimmed baking sheets with parchment paper to ensure plenty of space for the squash.
  2. Peel the butternut squash and slice it into uniform 1-inch (2.5cm) cubes to ensure even cooking.
  3. In a large mixing bowl, combine the cubed squash, olive oil, salt, and pepper. Toss thoroughly.
  4. Add the minced garlic, dried rosemary, and smoked paprika to the bowl and toss again until every cube is evenly seasoned.
  5. Spread the squash in a single layer across the prepared baking sheets, ensuring pieces are not touching to prevent steaming.
  6. Bake for 35 minutes, flipping the pieces halfway through using a spatula, until edges are mahogany-colored and centers are tender.
