Ingredients:
- 2 lbs butternut squash, peeled and cubed into 1-inch pieces
- 2 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 3 cloves garlic, minced
- 1 tsp dried rosemary
- 1/4 tsp smoked paprika
Instructions:
- Preheat your oven to 400°F (200°C) and line two large rimmed baking sheets with parchment paper to ensure plenty of space for the squash.
- Peel the butternut squash and slice it into uniform 1-inch (2.5cm) cubes to ensure even cooking.
- In a large mixing bowl, combine the cubed squash, olive oil, salt, and pepper. Toss thoroughly.
- Add the minced garlic, dried rosemary, and smoked paprika to the bowl and toss again until every cube is evenly seasoned.
- Spread the squash in a single layer across the prepared baking sheets, ensuring pieces are not touching to prevent steaming.
- Bake for 35 minutes, flipping the pieces halfway through using a spatula, until edges are mahogany-colored and centers are tender.
