Ingredients:

  • 2 lbs fresh figs, stems removed and quartered
  • 1.5 cups granulated sugar
  • 3 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 0.25 tsp fine sea salt

Instructions:

  1. Combine the quartered figs, sugar, lemon juice, and salt in your pot.
  2. Stir well and let the mixture sit for 10-15 minutes. Note: This lets the sugar dissolve into a natural syrup.
  3. Place the pot over medium heat until the mixture begins to bubble.
  4. Immediately reduce the heat to medium low.
  5. Simmer for 20-30 minutes, stirring occasionally.
  6. Use a potato masher to gently crush some figs until you have a mix of chunks and syrup.
  7. Continue simmering until the jam reduces by a third and looks like a thick glaze.
  8. Remove from heat and stir in the vanilla extract.
  9. Perform the plate test: drop a spoonful of jam onto the chilled plate. Push it with your finger; if it wrinkles, it's done.
  10. Funnel the jam into sterilized jars, leaving 1/2 inch of headspace, and seal.
