Ingredients:
- 2 cups (300g) cherry tomatoes, halved
- 8 oz (225g) fresh mozzarella pearls
- ½ cup (15g) fresh basil leaves, torn into bite-sized pieces
- 3 tbsp (45ml) extra-virgin olive oil
- 2 tbsp (30ml) balsamic glaze
- ½ tsp (3g) sea salt
- ¼ tsp (1g) cracked black pepper
Instructions:
- Place the halved cherry tomatoes and mozzarella pearls into the mixing bowl. Sprinkle with sea salt and let them sit for 2 minutes to draw out the natural juices.
- In a small separate container, whisk together the olive oil and balsamic glaze until the mixture is cohesive and glossy.
- Fold in the torn basil leaves gently to avoid bruising them. Pour the dressing over the mixture and toss lightly.
- Transfer to a platter and finish with a final crack of black pepper.
