Ingredients:
- 1 lb sirloin steak, thinly sliced against the grain
- 1/2 tsp baking soda
- 1 tbsp soy sauce
- 1 tbsp cornstarch
- 1/4 cup soy sauce
- 1 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 1 tbsp cornstarch
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 red bell pepper, sliced into strips
- 1 green bell pepper, sliced into strips
- 1 cup broccoli florets, bite-sized
- 2 green onions, sliced
- 1 tsp toasted sesame seeds
Instructions:
- Toss the sliced beef with baking soda, 1 tablespoon of soy sauce, and 1 tablespoon of cornstarch. Let it sit for 15 minutes at room temperature to velvetize the meat.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat until shimmering. Add the beef in a single layer and sear until mahogany-colored, about 2 minutes per side. Remove beef to a plate immediately.
- Add the remaining 1 tablespoon of oil to the same pan. Sauté minced garlic and grated ginger for 30 seconds, then add sliced red and green bell peppers and broccoli. Stir-fry for 3-4 minutes until vibrant and crisp-tender.
- Return the cooked beef and any juices to the pan. Whisk together the remaining soy sauce, brown sugar, rice vinegar, sesame oil, cornstarch, and black pepper, then pour over the mixture. Toss constantly for 1-2 minutes until the sauce thickens into a glossy glaze.
- Garnish with sliced green onions and toasted sesame seeds before serving.
