Ingredients:

  • 2 cups strong chilled coffee or cold brew
  • 1 cup unsweetened almond milk or half-and-half
  • 2 tbsp sugar-free vanilla pudding mix
  • 4 cups ice cubes
  • 2 tbsp maple syrup or monk fruit sweetener

Instructions:

  1. Combine the chilled coffee, milk, and sweetener in a high-speed blender jar.
  2. Add the ice cubes and the sugar-free vanilla pudding mix to the blender.
  3. Start the blender on the lowest setting to break up large ice chunks, then rapidly increase to the highest speed. Blend for 45–60 seconds until the texture is uniform and velvety.
  4. Stop the blender and check for soft peaks. If the mixture is too thin, add an additional 1/2 cup of ice; if too thick, add a splash more coffee and pulse until smooth.
