Ingredients:

  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup warm milk
  • 2 cups vegetable oil

Instructions:

  1. Whisk the all-purpose flour, baking powder, and salt in a large mixing bowl.
  2. Slowly pour in the warm milk, stirring with a spoon until a soft, tacky dough forms. Mix only until the flour is incorporated to avoid over-working the dough.
  3. Cover the bowl with a clean kitchen towel and let the dough rest for 15 minutes to relax the gluten.
  4. Heat vegetable oil in a cast iron skillet or deep frying pan until it reaches 350°F (175°C).
  5. Pinch off a golf-ball-sized piece of dough and flatten it into a disc approximately 1/4 inch thick.
  6. Carefully slide the dough into the hot oil and fry for 2–3 minutes per side until golden-brown and bubbly.
  7. Remove with a slotted spoon and drain on paper towels.
