Ingredients:

  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups turkey or chicken stock
  • 1/4 cup dry white wine
  • 1 small onion, finely diced
  • 2 tbsp turkey pan drippings
  • salt to taste
  • black pepper to taste

Instructions:

  1. Melt the butter over medium heat until foaming.
  2. Stir in the diced onions and cook until translucent.
  3. Whisk in the flour and cook for 2-3 minutes until the mixture smells nutty and turns a pale gold.
  4. Gradually pour in the white wine and turkey stock, whisking constantly to incorporate.
  5. Simmer the mixture until thickened and velvety.
  6. To finish, heat the gravy base in a saucepan over medium heat and slowly whisk in the reserved turkey pan drippings.
  7. Continue to whisk over medium heat until the gravy reaches a gentle simmer.
  8. Taste and season with salt and pepper; pass through a fine-mesh strainer for a perfectly smooth finish if desired.
