Ingredients:

  • 1/2 cup extra virgin olive oil
  • 3 tbsp dry white wine
  • 3 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 9 cloves minced garlic
  • 1 tsp dried oregano
  • 1 tsp fresh thyme leaves
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 boneless skinless chicken breasts (1.5 lbs)

Instructions:

  1. In a medium bowl, whisk together the olive oil, white wine, lemon juice, zest, minced garlic, oregano, thyme, salt, and pepper until the garlic is evenly distributed.
  2. Place the chicken breasts in a 9x13 inch baking dish.
  3. Pour the marinade over the chicken breasts, turning them to ensure they are fully submerged.
  4. Roast in a preheated 400°F (200°C) oven for 30-37 minutes, or until the internal temperature reaches 160°F (71°C).
  5. Remove the pan from the oven and let the chicken rest in its own juices for 5-10 minutes to reach a final internal temperature of 165°F (74°C).
