Ingredients:
- 1/2 cup extra virgin olive oil
- 3 tbsp dry white wine
- 3 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 9 cloves minced garlic
- 1 tsp dried oregano
- 1 tsp fresh thyme leaves
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 4 boneless skinless chicken breasts (1.5 lbs)
Instructions:
- In a medium bowl, whisk together the olive oil, white wine, lemon juice, zest, minced garlic, oregano, thyme, salt, and pepper until the garlic is evenly distributed.
- Place the chicken breasts in a 9x13 inch baking dish.
- Pour the marinade over the chicken breasts, turning them to ensure they are fully submerged.
- Roast in a preheated 400°F (200°C) oven for 30-37 minutes, or until the internal temperature reaches 160°F (71°C).
- Remove the pan from the oven and let the chicken rest in its own juices for 5-10 minutes to reach a final internal temperature of 165°F (74°C).
