Ingredients:

  • 2 lbs fresh figs, stemmed and quartered
  • 1 medium yellow onion, finely diced
  • 2 tbsp olive oil
  • ½ cup apple cider vinegar
  • ½ cup brown sugar, packed
  • 1 tsp sea salt
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • ½ tsp ground cinnamon
  • ¼ tsp ground cloves

Instructions:

  1. Heat the olive oil over medium heat. Add the diced onion and sauté for 3–5 minutes until translucent and slightly golden.
  2. Stir in the minced garlic and grated ginger, cooking for another 60 seconds until the fragrance is released but not browned.
  3. Add the quartered figs, brown sugar, apple cider vinegar, salt, cinnamon, and cloves. Stir well to ensure the sugar is evenly distributed among the fruit.
  4. Bring the mixture to a gentle simmer. Lower the heat and cook uncovered for 15–20 minutes, stirring occasionally, until the liquid has reduced to a glossy, syrupy consistency and the figs have softened into a thick mass.
