Ingredients:

  • 8 fresh figs (approx. 1 lb / 450g)
  • 4 oz (115g) soft goat cheese
  • 1 tbsp (21g) raw honey
  • 1 tbsp (15ml) balsamic glaze
  • 2 tbsp (15g) crushed pistachios or slivered almonds
  • 1 sprig fresh thyme or mint

Instructions:

  1. Wash the figs and pat them completely dry. Using a paring knife, slice each fig lengthwise from the stem to the base, cutting about three-quarters of the way through to create a pocket, then gently press the center to widen the opening.
  2. Spoon or pipe room-temperature goat cheese into the center of each fig, creating a velvety mound that sits slightly above the rim of the fruit.
  3. Arrange the stuffed figs on a platter and drizzle with honey and balsamic glaze in thin streams.
  4. Sprinkle crushed pistachios evenly over the top and garnish with tiny thyme leaves.
