Ingredients:
- 2 ¼ cups (280g) all-purpose flour
- 1 tsp (5g) baking powder
- ½ tsp (3g) baking soda
- ½ tsp (1g) salt
- 1 tsp (2g) ground cinnamon
- ½ cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs (100g)
- 1 tsp (5ml) vanilla extract
- ½ cup (120g) sour cream or Greek yogurt
- 2 cups (300g) fresh figs, stemmed and quartered
- 1 tbsp (8g) all-purpose flour
- 1 tbsp (15ml) lemon juice
- 2 tbsp (25g) melted butter
- 1 tbsp (12g) coarse turbinado sugar
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or Bundt pan with butter and line the bottom with parchment paper.
- In a medium bowl, toss the quartered fresh figs with lemon juice and 1 tablespoon of flour until lightly coated; set these aside.
- In a large bowl, beat the softened butter and granulated sugar on medium-high until the mixture looks pale and fluffy (about 3 minutes).
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract and sour cream until smooth.
- Whisk together the flour, baking powder, baking soda, salt, and cinnamon. Gradually add the dry mixture to the wet ingredients on low speed, mixing just until combined.
- Using a spatula, gently fold the floured figs into the batter.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is still warm, brush the top with melted butter and sprinkle with coarse turbinado sugar.
