Ingredients:
- 1.5 cups (190g) all-purpose flour
- 1 tsp (5g) baking powder
- 0.25 tsp (1.5g) salt
- 0.75 cup (150g) granulated sugar
- 1 cup (245g) whole milk ricotta cheese
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 tbsp (6g) lemon zest
- 0.25 cup (60ml) extra-virgin olive oil
- 8-10 fresh figs, stemmed and halved lengthwise
- 1 tbsp (15g) granulated sugar
- 1 tbsp (15g) melted butter
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan with melted butter and line the bottom with parchment paper.
- In a medium bowl, sift together the flour, baking powder, and salt; set aside.
- In a large bowl, beat the ricotta and sugar together until the mixture is smooth and pale.
- Add the eggs one at a time, beating well after each addition.
- Stir in the lemon zest, vanilla extract, and olive oil until the batter is creamy and uniform.
- Slowly add the dry flour mixture to the wet ingredients, mixing on low speed just until combined.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Press the halved figs gently into the surface, cut-side up, and sprinkle the remaining tablespoon of sugar over the figs.
- Bake for 40–45 minutes until the edges are deep mahogany-gold and a toothpick inserted into the center comes out clean.
