Ingredients:
- 4 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 small shallot, finely minced
- 1.5 tbsp Cajun seasoning
- 0.5 tsp smoked paprika
- 0.25 tsp cayenne pepper
- 2 cups heavy whipping cream
- 1 cup freshly grated Parmesan cheese
- 0.5 tsp kosher salt
- 0.25 tsp cracked black pepper
- 2 tbsp fresh parsley, chopped
- 1 green onion, thinly sliced
Instructions:
- Melt the 4 tbsp unsalted butter in a large skillet over medium heat until it begins to foam and sizzle gently.
- Add the minced shallot and cook for 2 minutes until translucent and soft. Note: Do not let them brown, or they will turn bitter.
- Stir in the 3 cloves of minced garlic and cook for 30 seconds until the aroma hits you.
- Add the 1.5 tbsp Cajun seasoning, smoked paprika, and cayenne pepper.
- Toast the spices in the butter for 1 minute until the butter turns a deep orange red.
- Slowly pour the heavy cream into the spiced butter while whisking constantly. Increase the heat to medium and bring the mixture to a gentle simmer. Let the sauce simmer for 5 minutes until the sauce thickens enough to coat the back of a spoon.
- Remove from heat and gradually whisk in the freshly grated Parmesan cheese until smooth and emulsified. Season with salt and pepper to taste.
- Garnish with fresh parsley and sliced green onions before serving over pasta or protein.
