Ingredients:

  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 small shallot, finely minced
  • 1.5 tbsp Cajun seasoning
  • 0.5 tsp smoked paprika
  • 0.25 tsp cayenne pepper
  • 2 cups heavy whipping cream
  • 1 cup freshly grated Parmesan cheese
  • 0.5 tsp kosher salt
  • 0.25 tsp cracked black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 green onion, thinly sliced

Instructions:

  1. Melt the 4 tbsp unsalted butter in a large skillet over medium heat until it begins to foam and sizzle gently.
  2. Add the minced shallot and cook for 2 minutes until translucent and soft. Note: Do not let them brown, or they will turn bitter.
  3. Stir in the 3 cloves of minced garlic and cook for 30 seconds until the aroma hits you.
  4. Add the 1.5 tbsp Cajun seasoning, smoked paprika, and cayenne pepper.
  5. Toast the spices in the butter for 1 minute until the butter turns a deep orange red.
  6. Slowly pour the heavy cream into the spiced butter while whisking constantly. Increase the heat to medium and bring the mixture to a gentle simmer. Let the sauce simmer for 5 minutes until the sauce thickens enough to coat the back of a spoon.
  7. Remove from heat and gradually whisk in the freshly grated Parmesan cheese until smooth and emulsified. Season with salt and pepper to taste.
  8. Garnish with fresh parsley and sliced green onions before serving over pasta or protein.
