Ingredients:
- 8 oz (225g) cream cheese, softened to room temperature
- ½ cup (100g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 2 cups (480ml) heavy whipping cream, chilled
- 1 lb (450g) fresh strawberries, thinly sliced
- 1 cup (150g) fresh blueberries
- 1 cup (125g) fresh raspberries
- 1 box (approx. 14 oz / 400g) honey graham crackers
Instructions:
- Beat the softened cream cheese and powdered sugar until the mixture is smooth and devoid of lumps.
- Slowly pour in the heavy cream and vanilla. Increase speed to medium-high and whip until stiff peaks form.
- Lay a single layer of graham crackers at the bottom of a 9x9 inch square baking dish, breaking them to fit the edges snugly.
- Spread approximately 1 cup of the cream mixture over the crackers using an offset spatula, ensuring the cream reaches every corner.
- Place a dense layer of sliced strawberries over the cream.
- Continue layering crackers, cream, and berries, finishing with a cream and berry topping.
- Refrigerate for a minimum of 6 hours or overnight to allow the crackers to hydrate into a cake-like texture.
