Ingredients:

  • 8 oz (225g) cream cheese, softened to room temperature
  • ½ cup (100g) powdered sugar
  • 1 tsp (5ml) vanilla extract
  • 2 cups (480ml) heavy whipping cream, chilled
  • 1 lb (450g) fresh strawberries, thinly sliced
  • 1 cup (150g) fresh blueberries
  • 1 cup (125g) fresh raspberries
  • 1 box (approx. 14 oz / 400g) honey graham crackers

Instructions:

  1. Beat the softened cream cheese and powdered sugar until the mixture is smooth and devoid of lumps.
  2. Slowly pour in the heavy cream and vanilla. Increase speed to medium-high and whip until stiff peaks form.
  3. Lay a single layer of graham crackers at the bottom of a 9x9 inch square baking dish, breaking them to fit the edges snugly.
  4. Spread approximately 1 cup of the cream mixture over the crackers using an offset spatula, ensuring the cream reaches every corner.
  5. Place a dense layer of sliced strawberries over the cream.
  6. Continue layering crackers, cream, and berries, finishing with a cream and berry topping.
  7. Refrigerate for a minimum of 6 hours or overnight to allow the crackers to hydrate into a cake-like texture.
