Ingredients:
- 1 lb lean ground turkey
- 2 medium zucchinis, diced into 1/2-inch cubes
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups marinara sauce
- 1 tsp dried Italian seasoning
- 1/2 tsp red pepper flakes
- 1 tbsp olive oil
- salt to taste
- black pepper to taste
- 1/2 cup whole milk ricotta cheese
- 1/4 cup freshly grated Parmesan cheese
- 2 tbsp fresh basil, torn
Instructions:
- Heat olive oil in the skillet over medium-high heat. Add the ground turkey, breaking it up with your spatula. Cook undisturbed for 3 minutes to develop a deep brown sear, then stir and cook until no longer pink.
- Push the turkey to the sides of the pan. Add the diced onion and bell pepper to the center. Sauté for 3–4 minutes until the onions are translucent.
- Stir in the minced garlic and Italian seasoning, cooking for just 60 seconds until the aroma becomes fragrant.
- Fold in the diced zucchini and pour the marinara sauce over the mixture. Lower the heat to medium-low and simmer for 5–7 minutes, or until the zucchini is tender but not mushy.
- Remove from heat. Spoon dollops of ricotta across the top and sprinkle with Parmesan and fresh basil.
