Ingredients:

  • 1 lb lean ground turkey
  • 2 medium zucchinis, diced into 1/2-inch cubes
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups marinara sauce
  • 1 tsp dried Italian seasoning
  • 1/2 tsp red pepper flakes
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste
  • 1/2 cup whole milk ricotta cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tbsp fresh basil, torn

Instructions:

  1. Heat olive oil in the skillet over medium-high heat. Add the ground turkey, breaking it up with your spatula. Cook undisturbed for 3 minutes to develop a deep brown sear, then stir and cook until no longer pink.
  2. Push the turkey to the sides of the pan. Add the diced onion and bell pepper to the center. Sauté for 3–4 minutes until the onions are translucent.
  3. Stir in the minced garlic and Italian seasoning, cooking for just 60 seconds until the aroma becomes fragrant.
  4. Fold in the diced zucchini and pour the marinara sauce over the mixture. Lower the heat to medium-low and simmer for 5–7 minutes, or until the zucchini is tender but not mushy.
  5. Remove from heat. Spoon dollops of ricotta across the top and sprinkle with Parmesan and fresh basil.
