Ingredients:

  • 3 cups chow mein noodles (approx. 150g)
  • 1 cup roasted peanuts (140g)
  • 12 oz white chocolate chips (340g)
  • 1 tbsp coconut oil
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp flaky sea salt

Instructions:

  1. Line a large baking sheet with parchment paper or a silicone mat. Ensure all bowls and utensils are completely dry to prevent the chocolate from seizing.
  2. In a large microwave-safe glass bowl, combine white chocolate chips and coconut oil. Microwave at 50% power in 30-second intervals, stirring vigorously between each burst, until smooth.
  3. Stir the vanilla extract into the melted chocolate. Gently fold in the chow mein noodles and roasted peanuts using a silicone spatula until every piece is fully coated.
  4. Using two spoons or a small cookie scoop, drop roughly 2-tablespoon mounds of the mixture onto the prepared baking sheet.
  5. Sprinkle the tops lightly with flaky sea salt while still wet. Allow the clusters to set at room temperature or in the refrigerator for 45 minutes until firm.
