Ingredients:
- 3 cups chow mein noodles (approx. 150g)
- 1 cup roasted peanuts (140g)
- 12 oz white chocolate chips (340g)
- 1 tbsp coconut oil
- 1/2 tsp pure vanilla extract
- 1/4 tsp flaky sea salt
Instructions:
- Line a large baking sheet with parchment paper or a silicone mat. Ensure all bowls and utensils are completely dry to prevent the chocolate from seizing.
- In a large microwave-safe glass bowl, combine white chocolate chips and coconut oil. Microwave at 50% power in 30-second intervals, stirring vigorously between each burst, until smooth.
- Stir the vanilla extract into the melted chocolate. Gently fold in the chow mein noodles and roasted peanuts using a silicone spatula until every piece is fully coated.
- Using two spoons or a small cookie scoop, drop roughly 2-tablespoon mounds of the mixture onto the prepared baking sheet.
- Sprinkle the tops lightly with flaky sea salt while still wet. Allow the clusters to set at room temperature or in the refrigerator for 45 minutes until firm.
