Ingredients:

  • 1 lb ground turkey
  • 1 tbsp neutral oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup water chestnuts, finely diced
  • 2 green onions, thinly sliced
  • 3 tbsp hoisin sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 head butter lettuce, leaves separated

Instructions:

  1. Heat neutral oil in a 12-inch skillet or wok over medium-high heat until shimmering.
  2. Add ground turkey in a flat layer and cook undisturbed for 4-5 minutes until a mahogany-colored crust forms, then break meat into small crumbles.
  3. Lower heat to medium and stir in minced garlic, grated ginger, and the white parts of the green onions; sauté for 2 minutes.
  4. Fold in the diced water chestnuts.
  5. Pour in the mixture of hoisin sauce, soy sauce, rice vinegar, and sesame oil. Stir constantly for 2-3 minutes until the sauce reduces into a glossy glaze.
  6. Remove from heat and stir in the green onion tops.
  7. Spoon the turkey mixture into chilled butter lettuce leaves and serve immediately.
