Ingredients:
- 1 lb (450g) Rotini or Fusilli pasta
- 1 lb (450g) Chicken breast, cooked and cubed
- 1 tsp (5g) Salt
- 1 cup (100g) Celery, finely diced
- 1/2 cup (75g) Red onion, finely minced
- 1 cup (130g) Red bell pepper, diced
- 1/2 cup (60g) Carrots, shredded
- 1/4 cup (15g) Fresh parsley, chopped
- 3/4 cup (170g) Mayonnaise
- 1/4 cup (60g) Sour cream
- 2 tbsp (30ml) Apple cider vinegar
- 1 tbsp (15ml) Honey
- 1 tbsp (15g) Dijon mustard
- 1/2 tsp (3g) Garlic powder
- Salt and black pepper to taste
Instructions:
- Bring a large pot of salted water to a boil. Add the rotini and cook for 2 minutes less than the package instructions.
- Drain the pasta in a colander and rinse immediately with cold water to stop the cooking process and remove excess starch.
- Ensure your cubed chicken is cooled to room temperature.
- In a small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, honey, mustard, and garlic powder until the mixture is smooth and pale.
- Finely dice the celery, red onion, bell pepper, and carrots into sizes roughly the same as the pasta spirals.
- Combine the chilled pasta, cooled chicken, and diced vegetables in a large mixing bowl.
- Pour the dressing over the mixture and gently fold the ingredients together until every spiral is coated.
- Stir in the fresh parsley and season with salt and black pepper to taste.
