Ingredients:

  • 2 cups (300g) Fresh strawberries, hulled and quartered
  • 1 cup (150g) Fresh blueberries
  • 2 cups (300g) Pineapple, diced into ½ inch cubes
  • 2 cups (300g) Honeydew or Cantaloupe, cubed
  • 1 cup (150g) Red grapes, halved
  • 2 kiwis, peeled and sliced
  • 2 mandarin oranges, peeled and segmented
  • 3 tbsp (45ml) Honey
  • 2 tbsp (30ml) Freshly squeezed lime juice
  • ½ tsp (2.5ml) Lime zest
  • 1 tbsp (15ml) Fresh mint, finely chiffonaded

Instructions:

  1. Wash all produce under cold water and chop the larger fruits into uniform, bite-sized pieces.
  2. In a small bowl, whisk together the honey, lime juice, and zest until the honey is fully incorporated and the mixture is smooth and glossy.
  3. Pour the dressing over the fruit and using a silicone spatula, gently fold the fruit from the bottom up until every piece is coated in a thin layer of glaze.
