Ingredients:
- 2 cups (300g) Fresh strawberries, hulled and quartered
- 1 cup (150g) Fresh blueberries
- 2 cups (300g) Pineapple, diced into ½ inch cubes
- 2 cups (300g) Honeydew or Cantaloupe, cubed
- 1 cup (150g) Red grapes, halved
- 2 kiwis, peeled and sliced
- 2 mandarin oranges, peeled and segmented
- 3 tbsp (45ml) Honey
- 2 tbsp (30ml) Freshly squeezed lime juice
- ½ tsp (2.5ml) Lime zest
- 1 tbsp (15ml) Fresh mint, finely chiffonaded
Instructions:
- Wash all produce under cold water and chop the larger fruits into uniform, bite-sized pieces.
- In a small bowl, whisk together the honey, lime juice, and zest until the honey is fully incorporated and the mixture is smooth and glossy.
- Pour the dressing over the fruit and using a silicone spatula, gently fold the fruit from the bottom up until every piece is coated in a thin layer of glaze.
