Ingredients:

  • 1 lb fresh figs
  • 1 lb fresh strawberries
  • 1 tbsp lemon juice
  • 3/4 cup cane sugar
  • 2 tbsp honey
  • 1/4 tsp salt

Instructions:

  1. Combine the quartered figs and halved strawberries in a heavy-bottomed pot. Use a potato masher to lightly crush the berries while leaving the fig pieces intact. Stir in the lemon juice and salt.
  2. Add the cane sugar and honey. Place the pot over medium heat, stirring constantly until the sugar has completely dissolved. Increase the heat to medium-high and bring the mixture to a rolling boil.
  3. Reduce heat to medium and simmer for 20 minutes, stirring frequently to prevent sticking. The jam is ready when it reaches a thick, glossy consistency and passes the plate test (wrinkles when pushed with a finger).
  4. Ladle the hot jam into sterilized jars, leaving 1/4 inch of headspace. Seal tightly and process in a water bath for 10 minutes for long-term storage, or let cool and refrigerate.
