Ingredients:
- 1 lb fresh figs
- 1 lb fresh strawberries
- 1 tbsp lemon juice
- 3/4 cup cane sugar
- 2 tbsp honey
- 1/4 tsp salt
Instructions:
- Combine the quartered figs and halved strawberries in a heavy-bottomed pot. Use a potato masher to lightly crush the berries while leaving the fig pieces intact. Stir in the lemon juice and salt.
- Add the cane sugar and honey. Place the pot over medium heat, stirring constantly until the sugar has completely dissolved. Increase the heat to medium-high and bring the mixture to a rolling boil.
- Reduce heat to medium and simmer for 20 minutes, stirring frequently to prevent sticking. The jam is ready when it reaches a thick, glossy consistency and passes the plate test (wrinkles when pushed with a finger).
- Ladle the hot jam into sterilized jars, leaving 1/4 inch of headspace. Seal tightly and process in a water bath for 10 minutes for long-term storage, or let cool and refrigerate.
