Ingredients:
- 6 cups fresh peaches, peeled and sliced
- 1/2 cup maple syrup
- 2 tbsp cornstarch
- 1 tsp ground cinnamon
- 1 tbsp fresh lemon juice
- 2 tbsp unsalted butter, melted
- 1 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp fine sea salt
- 6 tbsp cold unsalted butter, cubed
- 3/4 cup whole milk
- 1 tbsp cinnamon sugar
Instructions:
- Preheat the oven to 375°F (190°C). Pour the melted butter into the bottom of a 9x9 inch baking dish, tilting to coat the surface.
- In a medium bowl, toss sliced peaches with maple syrup, cornstarch, cinnamon, and lemon juice. Spread the mixture evenly over the butter in the baking dish.
- In a large bowl, whisk together flour, baking powder, and salt.
- Add cold, cubed butter to the flour mixture. Use a pastry cutter or fork to work the butter in until it resembles coarse crumbs with pea-sized bits remaining.
- Gently stir in the milk until the dough just comes together, being careful not to overmix.
- Drop spoonfuls of the dough over the peach base, leaving small gaps to allow steam to escape.
- Sprinkle the top with cinnamon sugar.
- Bake for 35–40 minutes until the crust is a deep amber hue and the filling is bubbling thick and glossy.
