Ingredients:

  • 6 cups fresh peaches, peeled and sliced
  • 1/2 cup maple syrup
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 tbsp fresh lemon juice
  • 2 tbsp unsalted butter, melted
  • 1 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp fine sea salt
  • 6 tbsp cold unsalted butter, cubed
  • 3/4 cup whole milk
  • 1 tbsp cinnamon sugar

Instructions:

  1. Preheat the oven to 375°F (190°C). Pour the melted butter into the bottom of a 9x9 inch baking dish, tilting to coat the surface.
  2. In a medium bowl, toss sliced peaches with maple syrup, cornstarch, cinnamon, and lemon juice. Spread the mixture evenly over the butter in the baking dish.
  3. In a large bowl, whisk together flour, baking powder, and salt.
  4. Add cold, cubed butter to the flour mixture. Use a pastry cutter or fork to work the butter in until it resembles coarse crumbs with pea-sized bits remaining.
  5. Gently stir in the milk until the dough just comes together, being careful not to overmix.
  6. Drop spoonfuls of the dough over the peach base, leaving small gaps to allow steam to escape.
  7. Sprinkle the top with cinnamon sugar.
  8. Bake for 35–40 minutes until the crust is a deep amber hue and the filling is bubbling thick and glossy.
