Ingredients:
- 2 lbs boneless, skinless chicken thighs, cut into 1-inch chunks
- 1 lb Yukon Gold potatoes, peeled and cubed
- 3 large carrots, sliced into thick rounds
- 2 stalks celery, sliced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 1 tsp salt
- ½ tsp black pepper
- ½ cup heavy cream
- 2 tbsp cornstarch
- 1 cup frozen peas
- 2 tbsp fresh parsley, chopped
Instructions:
- Combine the cubed chicken thighs, potatoes, carrots, celery, and onion in the bottom of the slow cooker. Stir in the minced garlic, thyme, rosemary, salt, and pepper.
- Pour the chicken broth over the ingredients and nestle the bay leaf into the liquid.
- Cover with the lid and cook on Low for 6–8 hours or High for 3–4 hours.
- In a small bowl, whisk together the heavy cream and cornstarch until smooth.
- Stir the cream mixture and frozen peas into the slow cooker. Cover and cook on High for an additional 20–30 minutes.
- Remove the bay leaf and stir in fresh parsley before serving.
