Ingredients:
- 4 large peaches, halved and pitted (approx. 900g)
- 4 tbsp unsalted butter, melted (57g)
- 1/2 cup packed light brown sugar (100g)
- 1 tsp ground cinnamon (2g)
- 1 tsp pure vanilla extract (5ml)
- pinch of salt
Instructions:
- Carefully slice the peaches in half and remove the pits. Place them cut-side up in a 9x13 inch baking dish, ensuring they are snug but not overlapping.
- In a small bowl, whisk together the melted butter, brown sugar, cinnamon, and vanilla extract until the mixture is smooth and resembles a thick paste.
- Spoon the sugar mixture evenly into the hollow center of each peach, letting some overflow onto the bottom of the dish.
- Bake at 350°F (175°C) for 30-35 minutes, or until peaches are tender when pierced with a fork and the syrup is bubbling and mahogany-colored.
