Ingredients:
- 1 lb (450g) Italian pork sausage
- 1 tbsp (15g) olive oil
- 1 medium (110g) yellow onion, diced
- 3 cloves (9g) garlic, minced
- 2 carrots (60g), sliced into rounds
- 6 cups (1.4L) low-sodium chicken broth
- 1 can (14.5oz / 411g) diced tomatoes
- 1 tsp (5g) dried oregano
- ½ tsp (2g) red pepper flakes
- 1 package (19oz / 538g) refrigerated cheese tortellini
- 2 cups (60g) fresh baby spinach
- ½ cup (120ml) heavy cream
- ¼ cup (15g) grated Parmesan cheese
Instructions:
- Heat olive oil in the Dutch oven over medium-high heat.
- Add the Italian sausage, breaking it into small crumbles with your spoon. Cook until the meat is browned and mahogany-colored.
- Stir in the diced onion and carrots. Sauté for 4–5 minutes until the onions are translucent.
- Add the minced garlic and cook for 60 seconds until fragrant.
- Pour in the chicken broth and diced tomatoes (with their juices).
- Stir in the dried oregano and red pepper flakes.
- Bring the mixture to a gentle boil, then reduce heat to low. Simmer uncovered for 10–15 minutes.
- Gently stir in the refrigerated tortellini. Cook for 5–7 minutes, or until the pasta floats to the surface and is tender.
- Stir in the heavy cream and grated Parmesan until the broth is a pale, velvety gold.
- Fold in the fresh baby spinach and remove from heat immediately.
