Ingredients:

  • 2 cups (300g) fresh peaches, diced small
  • 1/4 cup (50g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1/8 tsp (0.75g) salt
  • 2 cups (480ml) heavy cream, chilled
  • 1 cup (240ml) whole milk, chilled
  • 3/4 cup (150g) granulated sugar
  • 1 tbsp (15ml) vanilla bean paste
  • 1/4 tsp (1.5g) salt

Instructions:

  1. In a medium bowl, toss the diced peaches with sugar, lemon juice, and salt.
  2. Let the peach mixture sit for 30 minutes at room temperature until the peaches release their juices and look glossy.
  3. In a large bowl, whisk together the chilled heavy cream, whole milk, sugar, vanilla bean paste, and salt.
  4. Whisk vigorously for 2-3 minutes until the sugar is completely dissolved and the mixture is slightly aerated.
  5. Pour the vanilla base into your ice cream maker and churn according to manufacturer instructions (usually 20-25 minutes) until it reaches a soft serve consistency.
  6. Gently fold in the macerated peaches and their syrup using a spatula, swirling them in rather than fully mixing to create ribbons of fruit.
