Ingredients:
- 2 cups (300g) fresh peaches, diced small
- 1/4 cup (50g) granulated sugar
- 1 tbsp (15ml) lemon juice
- 1/8 tsp (0.75g) salt
- 2 cups (480ml) heavy cream, chilled
- 1 cup (240ml) whole milk, chilled
- 3/4 cup (150g) granulated sugar
- 1 tbsp (15ml) vanilla bean paste
- 1/4 tsp (1.5g) salt
Instructions:
- In a medium bowl, toss the diced peaches with sugar, lemon juice, and salt.
- Let the peach mixture sit for 30 minutes at room temperature until the peaches release their juices and look glossy.
- In a large bowl, whisk together the chilled heavy cream, whole milk, sugar, vanilla bean paste, and salt.
- Whisk vigorously for 2-3 minutes until the sugar is completely dissolved and the mixture is slightly aerated.
- Pour the vanilla base into your ice cream maker and churn according to manufacturer instructions (usually 20-25 minutes) until it reaches a soft serve consistency.
- Gently fold in the macerated peaches and their syrup using a spatula, swirling them in rather than fully mixing to create ribbons of fruit.
