Ingredients:
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) packed light brown sugar
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) fine sea salt
- 1/2 cup (113g) unsalted butter, chilled and cubed
- 1/2 cup (45g) old-fashioned rolled oats
- 1/2 cup (60g) chopped pecans
Instructions:
- In a large mixing bowl, combine the flour, brown sugar, cinnamon, and salt. Whisk thoroughly until no lumps of brown sugar remain and the mixture is a uniform, pale tan color.
- Add the chilled, cubed butter to the flour mixture. Use a pastry blender or your fingertips to rub the butter into the flour until the mixture resembles coarse wet sand with some pea-sized lumps remaining.
- Fold in the rolled oats and chopped pecans. Stir gently with a spatula just until evenly distributed, taking care not to overmix.
- Sprinkle the streusel evenly over your peach base. Leave the topping loose to allow heat to circulate and create a golden-brown, crisp finish.
