Ingredients:
- 6 cups fresh peaches, peeled and sliced
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- 1 cup packed light brown sugar
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 cup unsalted butter, chilled and cubed
Instructions:
- Preheat your oven to 375°F (190°C).
- Toss sliced peaches with granulated sugar, cornstarch, lemon juice, cinnamon, and salt. Note: Stir gently to avoid bruising the fruit.
- Pour the mixture into a 9 inch skillet or baking dish, spreading it evenly.
- Whisk rolled oats, flour, brown sugar, cinnamon, and salt in a medium bowl.
- Add the chilled, cubed butter.
- Work the butter into the dry ingredients using a pastry cutter or fingertips until you see pea sized clumps. Note: Don't overmix or it becomes a dough.
- Spoon the oatmeal topping over the peaches, pressing down very lightly.
- Bake 30-35 mins until peach juices bubble around the edges and the topping is a deep mahogany brown.
