Ingredients:

  • 6 cups fresh peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 cup packed light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, chilled and cubed

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Toss sliced peaches with granulated sugar, cornstarch, lemon juice, cinnamon, and salt. Note: Stir gently to avoid bruising the fruit.
  3. Pour the mixture into a 9 inch skillet or baking dish, spreading it evenly.
  4. Whisk rolled oats, flour, brown sugar, cinnamon, and salt in a medium bowl.
  5. Add the chilled, cubed butter.
  6. Work the butter into the dry ingredients using a pastry cutter or fingertips until you see pea sized clumps. Note: Don't overmix or it becomes a dough.
  7. Spoon the oatmeal topping over the peaches, pressing down very lightly.
  8. Bake 30-35 mins until peach juices bubble around the edges and the topping is a deep mahogany brown.
