Ingredients:
- 1.5 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 0.5 tsp baking soda
- 0.25 tsp salt
- 1 cup plain Greek yogurt
- 0.5 cup extra-virgin olive oil
- 3 large eggs
- 2 tbsp fresh basil leaves, finely minced
- 2 tbsp lemon zest
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 cup powdered sugar
- 2 tbsp fresh lemon juice
- 1 tsp melted butter
- 1 tsp fresh basil, finely minced
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a small bowl, combine lemon zest and minced basil with granulated sugar, massaging them together until fragrant and damp.
- In a large bowl, whisk together Greek yogurt, olive oil, eggs, lemon juice, and vanilla extract until smooth and pale.
- Stir the infused sugar into the wet mixture.
- Slowly fold in the flour, baking powder, baking soda, and salt until just combined.
- Pour the batter into the prepared pan and bake for 45–50 minutes, or until edges are deep golden-brown and a toothpick comes out clean.
- While cake cools, whisk together powdered sugar, lemon juice, and melted butter to create a glaze.
- Pour glaze over the cooled cake and garnish with finely minced fresh basil.
