Ingredients:

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 1 cup plain Greek yogurt
  • 0.5 cup extra-virgin olive oil
  • 3 large eggs
  • 2 tbsp fresh basil leaves, finely minced
  • 2 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 2 tbsp fresh lemon juice
  • 1 tsp melted butter
  • 1 tsp fresh basil, finely minced

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a small bowl, combine lemon zest and minced basil with granulated sugar, massaging them together until fragrant and damp.
  3. In a large bowl, whisk together Greek yogurt, olive oil, eggs, lemon juice, and vanilla extract until smooth and pale.
  4. Stir the infused sugar into the wet mixture.
  5. Slowly fold in the flour, baking powder, baking soda, and salt until just combined.
  6. Pour the batter into the prepared pan and bake for 45–50 minutes, or until edges are deep golden-brown and a toothpick comes out clean.
  7. While cake cools, whisk together powdered sugar, lemon juice, and melted butter to create a glaze.
  8. Pour glaze over the cooled cake and garnish with finely minced fresh basil.
