Ingredients:
- 2.5 cups (310g) all-purpose flour
- 1 cup (225g) unsalted butter, chilled and cubed
- 1 tsp (6g) salt
- 1 tbsp (12g) granulated sugar
- 8 tbsp (120ml) ice-cold water
- 5 cups (710g) fresh figs, stemmed and quartered
- 0.5 cup (100g) granulated sugar
- 0.25 cup (50g) light brown sugar, packed
- 2 tbsp (16g) cornstarch
- 1 tsp (2g) ground cinnamon
- 0.5 tsp (3g) salt
- 1 tbsp (15ml) fresh lemon juice
- 2 tbsp (28g) unsalted butter, cubed
- 1 large egg
- 1 tbsp (12g) turbinado sugar
Instructions:
- Combine flour, salt, and sugar in a bowl. Cut in the chilled butter until the mixture resembles coarse crumbs with some pea-sized lumps remaining.
- Gradually add ice water, one tablespoon at a time, mixing until the dough just holds together.
- Shape the dough into a disk, wrap in plastic, and refrigerate for at least 1 hour.
- In a large bowl, toss the quartered figs with granulated sugar, brown sugar, cornstarch, cinnamon, salt, and lemon juice. Let the mixture sit for 10 minutes to create a natural syrup.
- Preheat the oven to 425°F (218°C).
- Roll out the chilled dough and fit it into a 9-inch pie plate, crimping the edges.
- Pour in the fig mixture and dot the top with cubed butter.
- Top with a second rolled crust (full or lattice), seal the edges, brush the top with beaten egg wash, and sprinkle with turbinado sugar.
- Bake for 45 minutes or until the crust is golden brown.
