Ingredients:
- 4 large (approx. 2 lbs / 900g) fresh peaches, pitted and sliced into wedges
- 2 tbsp (42g) honey
- 1 tsp (2g) ground cinnamon
- 1 tsp (5ml) vanilla extract
- 1 tbsp (15ml) lemon juice
- 1/2 cup (45g) almond flour
- 1/4 cup (20g) rolled oats
- 2 tbsp (28g) melted coconut oil
- 1 tbsp (12g) maple syrup
- 1/4 tsp (1g) sea salt
Instructions:
- Toss the sliced peaches in a bowl with honey, cinnamon, vanilla, and lemon juice. Ensure every slice is coated in the glaze.
- Spread the peach mixture evenly into an 8x8 inch baking dish, pressing down slightly to create a compact layer.
- In a small bowl, combine almond flour, oats, and sea salt.
- Stir in the melted coconut oil and maple syrup until the mixture resembles coarse, wet sand.
- Crumble the topping over the peaches using your fingers, leaving some small clumps for texture.
- Bake in a preheated oven at 350°F (175°C) for 30–35 minutes until fruit juices bubble and the topping is deep golden brown.
