Ingredients:

  • 4 large (approx. 2 lbs / 900g) fresh peaches, pitted and sliced into wedges
  • 2 tbsp (42g) honey
  • 1 tsp (2g) ground cinnamon
  • 1 tsp (5ml) vanilla extract
  • 1 tbsp (15ml) lemon juice
  • 1/2 cup (45g) almond flour
  • 1/4 cup (20g) rolled oats
  • 2 tbsp (28g) melted coconut oil
  • 1 tbsp (12g) maple syrup
  • 1/4 tsp (1g) sea salt

Instructions:

  1. Toss the sliced peaches in a bowl with honey, cinnamon, vanilla, and lemon juice. Ensure every slice is coated in the glaze.
  2. Spread the peach mixture evenly into an 8x8 inch baking dish, pressing down slightly to create a compact layer.
  3. In a small bowl, combine almond flour, oats, and sea salt.
  4. Stir in the melted coconut oil and maple syrup until the mixture resembles coarse, wet sand.
  5. Crumble the topping over the peaches using your fingers, leaving some small clumps for texture.
  6. Bake in a preheated oven at 350°F (175°C) for 30–35 minutes until fruit juices bubble and the topping is deep golden brown.
