Ingredients:

  • 1 lb Lean Ground Beef (90/10)
  • 1 tsp Kosher salt
  • 0.5 tsp Cracked black pepper
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh ginger, grated
  • 2 Green onions, whites and greens separated
  • 1 Red bell pepper, finely diced
  • 0.33 cup Low-sodium soy sauce
  • 0.25 cup Rice vinegar
  • 3 tbsp Honey
  • 1.5 tbsp Sambal Oelek
  • 1 tsp Toasted sesame oil
  • 1 tsp Cornstarch

Instructions:

  1. Place your skillet over medium high heat. Add the 1 lb Lean Ground Beef, breaking it into large chunks with a wooden spoon. Do not move it for at least 3 minutes until a deep brown crust forms.
  2. Sprinkle the 1 tsp Kosher salt and 0.5 tsp Cracked black pepper over the meat. Continue to break the beef into smaller crumbles as it cooks.
  3. Add the 3 cloves minced garlic, 1 tbsp grated ginger, and the white parts of the 2 green onions. Sauté for about 1 minute until the air smells fragrant and spicy.
  4. Toss in the diced 1 red bell pepper. Stir fry for 2 minutes until the pepper is bright but still has a snap.
  5. In a small bowl, whisk together the 0.33 cup soy sauce, 0.25 cup rice vinegar, 3 tbsp honey, and 1.5 tbsp Sambal Oelek. Pour this directly into the pan.
  6. Scrape the bottom of the pan with your spoon to release all those browned beef bits. This is where the hidden flavor lives.
  7. Mix the 1 tsp cornstarch with a splash of water (about 1 tbsp) until smooth. Pour this into the bubbling sauce.
  8. Reduce heat to medium. Stir constantly for 1 to 2 minutes until the sauce turns translucent and clings to every piece of beef.
  9. Remove from heat. Drizzle the 1 tsp toasted sesame oil over the top and stir gently.
  10. Garnish with the green parts of the green onions. Serve immediately while the sauce is at its glossiest.
