Ingredients:
- 1 lb (450g) boneless skinless chicken breasts
- 2 tbsp (30ml) olive oil
- 1 tbsp (15ml) balsamic vinegar
- 1 tsp (5g) garlic powder
- ½ tsp (3g) sea salt
- ½ tsp (3g) cracked black pepper
- ¼ cup (60ml) balsamic vinegar
- ⅓ cup (80ml) extra virgin olive oil
- 1 tbsp (15ml) raw honey
- 1 tsp (5g) Dijon mustard
- 1 clove (5g) garlic, minced
- ¼ tsp (1g) salt
- ¼ tsp (1g) black pepper
- 6 oz (170g) fresh baby spinach, washed and dried
- ½ cup (75g) crumbled feta cheese
- ½ cup (75g) sliced red onion, thinly shaved
- 1 cup (150g) halved cherry tomatoes
- ¼ cup (30g) toasted slivered almonds
Instructions:
- Pat the chicken breasts dry with paper towels to ensure a proper sear.
- In a bowl, toss chicken with 2 tbsp olive oil, 1 tbsp balsamic vinegar, garlic powder, salt, and pepper.
- Let chicken marinate at room temperature for 15 minutes.
- Preheat outdoor grill or cast-iron grill pan to medium-high heat (approx. 375°F / 190°C).
- Place chicken on the heat and sear for 6–8 minutes per side without moving, until a mahogany crust forms and internal temperature reaches 165°F (74°C).
- Transfer chicken to a plate and let rest for 5 minutes to redistribute juices.
- Combine 1/4 cup balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper in a jar.
- Slowly stream in 1/3 cup extra virgin olive oil while whisking or shaking to create a stable emulsion.
- In a large mixing bowl, combine baby spinach, crumbled feta, sliced red onion, cherry tomatoes, and toasted almonds.
- Slice the rested chicken, place atop the salad, and drizzle with the balsamic vinaigrette immediately before serving.
