Ingredients:
- 450g Rotini or Fusilli pasta
- 15ml Salt
- 120ml Extra virgin olive oil
- 60ml Red wine vinegar
- 60g Grated Parmesan cheese
- 2 cloves Garlic, minced fine
- 5ml Dried oregano
Instructions:
- Bring a large pot of salted water to a rolling boil. Add pasta and cook for 1 minute less than the package directions to maintain an al dente texture.
- Drain the pasta immediately and rinse under cold running water until the noodles are completely chilled to the touch.
- In a mason jar or bowl, combine the olive oil, red wine vinegar, minced garlic, and dried oregano. Shake or whisk vigorously until the mixture is opaque and thickened.
- Fold the finely grated Parmesan cheese into the dressing until fully emulsified.
- In a large mixing bowl, add the chilled pasta.
- Pour the Parmesan dressing over the pasta and toss gently with tongs until evenly coated.
- Chill for 1 hour before serving for maximum flavor infusion.
