Ingredients:

  • 450g Rotini or Fusilli pasta
  • 15ml Salt
  • 120ml Extra virgin olive oil
  • 60ml Red wine vinegar
  • 60g Grated Parmesan cheese
  • 2 cloves Garlic, minced fine
  • 5ml Dried oregano

Instructions:

  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook for 1 minute less than the package directions to maintain an al dente texture.
  2. Drain the pasta immediately and rinse under cold running water until the noodles are completely chilled to the touch.
  3. In a mason jar or bowl, combine the olive oil, red wine vinegar, minced garlic, and dried oregano. Shake or whisk vigorously until the mixture is opaque and thickened.
  4. Fold the finely grated Parmesan cheese into the dressing until fully emulsified.
  5. In a large mixing bowl, add the chilled pasta.
  6. Pour the Parmesan dressing over the pasta and toss gently with tongs until evenly coated.
  7. Chill for 1 hour before serving for maximum flavor infusion.
