Ingredients:

  • 1.5 lb boneless skinless chicken breasts
  • 3 tbsp unsalted butter, softened
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • Fresh parsley for garnish

Instructions:

  1. Pat the chicken breasts dry with paper towels and cut 3-4 shallow slashes into the thickest part of each breast.
  2. In a small bowl, mash the softened butter, minced garlic, and herbs into a paste. Rub half of this mixture directly into the slashes and over the surface of the meat.
  3. Heat olive oil in a 12-inch oven-safe skillet over medium-high heat until shimmering.
  4. Place chicken in the pan and sear for 3-5 minutes per side without moving them until a deep mahogany-colored crust forms.
  5. Transfer the skillet directly into a preheated oven at 400°F (200°C). Dot the remaining herb butter on top of each breast and bake for 10-12 minutes until the internal temperature reaches 165°F (74°C).
  6. Remove the pan from the oven, drizzle fresh lemon juice over the chicken, and let the meat rest in the pan for 5 minutes.
