Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (240g) plain Greek yogurt
  • 1.5 tsp (7g) baking powder
  • 0.5 tsp (3g) salt
  • 4 tbsp (56g) unsalted butter, melted
  • 3 cloves (9g) fresh garlic, finely minced
  • 1 tbsp (4g) fresh parsley, chopped
  • 0.25 tsp (1.5g) salt

Instructions:

  1. Combine the all-purpose flour, baking powder, and salt in a mixing bowl.
  2. Fold in the room-temperature Greek yogurt using a spatula until a shaggy dough forms, then gently knead by hand for 30 seconds until smooth.
  3. Divide the dough into 12 equal portions and roll each into a circle approximately 1/4 inch thick.
  4. Place the dough circles on a medium-high heat cast iron skillet and cook for 2 minutes per side until golden-brown bubbles form and the bottom is mahogany-colored.
  5. Prepare the glaze by mixing melted unsalted butter, minced garlic, chopped parsley, and salt.
  6. Immediately brush the garlic butter mixture over the surface of the flatbread while it is still hot.
