Ingredients:
- 4 cups (600g) frozen peach slices, thawed and drained
- 1/2 cup (100g) granulated sugar
- 2 tbsp (16g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1g) ground nutmeg
- 1 tbsp (15ml) lemon juice
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (240ml) whole milk
- 1/2 cup (113g) unsalted butter, melted and cooled slightly
- 1 tsp (5ml) vanilla extract
Instructions:
- Place thawed peaches in a colander for 10 minutes to let excess liquid drip away.
- In a medium bowl, whisk together 100g sugar, cornstarch, cinnamon, and nutmeg. Fold in the peaches and lemon juice until coated.
- Pour the peach mixture into a 9x9 inch baking dish, spreading it evenly.
- In a large bowl, whisk together flour, 200g sugar, baking powder, and salt.
- Stir in the milk, melted butter, and vanilla extract until just combined; do not overmix.
- Spoon the batter over the peaches and spread gently with a spatula.
- Bake at 375°F (190°C) for 35–40 minutes until the edges are bubbling and the topping is golden brown.
