Ingredients:

  • 2 lbs fresh peaches, thinly sliced
  • 1 tbsp fresh lemon juice
  • 2 tbsp honey or maple syrup
  • ½ tsp ground cinnamon
  • 2 cups cold heavy whipping cream
  • ½ cup plain and strained Greek yogurt
  • ¼ cup powdered sweetener or maple syrup
  • 1 tsp vanilla extract
  • 14 oz low-sugar honey graham crackers

Instructions:

  1. Thinly slice the peaches into uniform rounds. In a medium bowl, toss the slices with lemon juice, honey, and cinnamon. Let them macerate for 10 minutes until the peaches release a bright, fragrant syrup.
  2. Combine the cold heavy cream, powdered sweetener, and vanilla in a chilled bowl. Beat on medium-high speed until stiff peaks form. Gently fold in the Greek yogurt using a spatula until the mixture is velvety and uniform.
  3. Place a single layer of graham crackers at the bottom of a 9x9 inch baking dish, breaking them to fit the edges. Spread one-third of the cream mixture evenly over the crackers. Top with a layer of sliced peaches, ensuring they are distributed evenly.
  4. Repeat the layers of graham crackers, cream, and peaches two more times.
  5. Smooth the final layer of cream over the top and garnish with reserved peach slices. Cover tightly with plastic wrap and refrigerate for at least 6 hours to allow the crackers to hydrate.
