Ingredients:
- 2 lbs fresh peaches, thinly sliced
- 1 tbsp fresh lemon juice
- 2 tbsp honey or maple syrup
- ½ tsp ground cinnamon
- 2 cups cold heavy whipping cream
- ½ cup plain and strained Greek yogurt
- ¼ cup powdered sweetener or maple syrup
- 1 tsp vanilla extract
- 14 oz low-sugar honey graham crackers
Instructions:
- Thinly slice the peaches into uniform rounds. In a medium bowl, toss the slices with lemon juice, honey, and cinnamon. Let them macerate for 10 minutes until the peaches release a bright, fragrant syrup.
- Combine the cold heavy cream, powdered sweetener, and vanilla in a chilled bowl. Beat on medium-high speed until stiff peaks form. Gently fold in the Greek yogurt using a spatula until the mixture is velvety and uniform.
- Place a single layer of graham crackers at the bottom of a 9x9 inch baking dish, breaking them to fit the edges. Spread one-third of the cream mixture evenly over the crackers. Top with a layer of sliced peaches, ensuring they are distributed evenly.
- Repeat the layers of graham crackers, cream, and peaches two more times.
- Smooth the final layer of cream over the top and garnish with reserved peach slices. Cover tightly with plastic wrap and refrigerate for at least 6 hours to allow the crackers to hydrate.
