Ingredients:

  • 1 sheet (9 oz / 255g) frozen puff pastry, thawed
  • 1 tbsp (15g) melted unsalted butter
  • 1 tsp (3g) ground cinnamon
  • 1/2 cup (50g) almond flour
  • 3 tbsp (38g) granulated sugar
  • 2 tbsp (28g) unsalted butter, softened
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1 tbsp (8g) cornstarch
  • 8-10 fresh figs (approx. 1 lb / 450g), stems removed
  • 2 tbsp (42g) honey
  • 1 tbsp (15ml) lemon juice

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. Roll out the puff pastry sheet and press it into your tart pan, trimming any excess.
  3. Prick the base with a fork several times Note: this prevents air pockets.
  4. Brush the base with melted butter and sprinkle with cinnamon.
  5. Cream softened butter and sugar in a bowl until smooth and pale.
  6. Beat in the egg and vanilla extract.
  7. Fold in the almond flour and cornstarch until a velvety paste forms.
  8. Spread the frangipane across the pastry, leaving a 1/2 inch border.
  9. Slice figs lengthwise into quarters and arrange them in a tight circle.
  10. Drizzle the honey and lemon juice mixture over the figs.
  11. Bake for 20-25 minutes until the edges are deep golden and figs look mahogany colored.
