Ingredients:
- 2 cups (300g) fresh peaches, peeled and sliced
- 2 tbsp (25g) granulated sugar
- 1 tsp (5ml) lemon juice
- 1 tsp (3g) cornstarch
- 1/4 tsp (0.5g) ground cinnamon
- 1/4 cup (30g) rolled oats
- 1/4 cup (30g) all-purpose flour
- 2 tbsp (25g) brown sugar, packed
- 2 tbsp (28g) cold unsalted butter, cubed
- Pinch of salt
Instructions:
- Preheat your oven to 375°F (190°C).
- In a small bowl, toss the sliced peaches with granulated sugar, lemon juice, cornstarch, and cinnamon.
- Divide the peach mixture evenly between two 6-oz oven-safe ramekins, pressing down slightly to ensure the fruit is packed.
- In the same bowl, combine the rolled oats, all-purpose flour, brown sugar, and salt.
- Add the cubed cold butter and use a fork or fingertips to rub the butter into the dry ingredients until the mixture resembles pea-sized crumbs.
- Spoon the topping over the peaches, piling it slightly in the center for extra height.
- Place ramekins on a baking sheet and bake for 20-25 minutes, or until the fruit is bubbling up the sides and the topping is mahogany-gold.
- Remove from oven and let cool for 5 minutes to allow the sauce to set before serving.
