Ingredients:

  • 2 cups (300g) fresh peaches, peeled and sliced
  • 2 tbsp (25g) granulated sugar
  • 1 tsp (5ml) lemon juice
  • 1 tsp (3g) cornstarch
  • 1/4 tsp (0.5g) ground cinnamon
  • 1/4 cup (30g) rolled oats
  • 1/4 cup (30g) all-purpose flour
  • 2 tbsp (25g) brown sugar, packed
  • 2 tbsp (28g) cold unsalted butter, cubed
  • Pinch of salt

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, toss the sliced peaches with granulated sugar, lemon juice, cornstarch, and cinnamon.
  3. Divide the peach mixture evenly between two 6-oz oven-safe ramekins, pressing down slightly to ensure the fruit is packed.
  4. In the same bowl, combine the rolled oats, all-purpose flour, brown sugar, and salt.
  5. Add the cubed cold butter and use a fork or fingertips to rub the butter into the dry ingredients until the mixture resembles pea-sized crumbs.
  6. Spoon the topping over the peaches, piling it slightly in the center for extra height.
  7. Place ramekins on a baking sheet and bake for 20-25 minutes, or until the fruit is bubbling up the sides and the topping is mahogany-gold.
  8. Remove from oven and let cool for 5 minutes to allow the sauce to set before serving.
