Ingredients:

  • 1/2 cup (65g) raw unsalted cashews
  • 1/2 cup (120ml) warm water
  • 2 cups (50g) packed fresh basil leaves
  • 2 cloves (6g) garlic, peeled
  • 1 tbsp (15ml) fresh lemon juice
  • 2 tbsp (6g) nutritional yeast
  • 1 tbsp (15ml) extra-virgin olive oil
  • 1/2 tsp (3g) fine sea salt
  • 1/4 tsp (1g) cracked black pepper

Instructions:

  1. Rinse the basil leaves under cold water and pat them completely dry with a paper towel to ensure the correct consistency.
  2. Combine the raw cashews, warm water, garlic, and lemon juice in a high-speed blender. Process on high for 30-60 seconds until the mixture is a smooth, white cream.
  3. Add the fresh basil, nutritional yeast, olive oil, salt, and pepper. Pulse in short bursts or blend on medium speed until the basil is finely chopped and the sauce is bright green.
