Ingredients:
- 1/2 cup (65g) raw cashews, soaked in hot water for 15 mins
- 1/4 cup (60ml) fresh lemon juice
- 1/3 cup (80ml) extra virgin olive oil
- 1 tbsp (15ml) maple syrup
- 2 cups (50g) fresh basil leaves, packed
- 1 clove (3g) garlic, peeled
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) cracked black pepper
- 2-3 tbsp (30-45ml) filtered water
Instructions:
- Drain the soaked cashews thoroughly using a fine-mesh strainer to ensure the water is completely removed.
- Place the drained cashews, lemon juice, maple syrup, and garlic into the blender. Process on high until the mixture is completely smooth. Slowly stream in the olive oil while the motor is running until the mixture is glossy and unified.
- Add the fresh basil leaves, salt, and pepper. Pulse or blend on medium-high for 20-30 seconds until the leaves are incorporated. If the mixture is too thick, add filtered water one tablespoon at a time until the desired consistency is reached.
