Ingredients:
- 1 lb (450g) Fettuccine or Penne
- 4 qts (3.8L) Water
- 2 tbsp (30g) Kosher salt
- 3 tbsp (45ml) Sun-dried tomato oil (from the jar)
- 4 oz (115g) Sun-dried tomatoes, thinly sliced
- 4 cloves (20g) Garlic, minced
- 1 cup (240ml) Heavy cream
- ¾ cup (75g) Freshly grated Parmesan cheese
- ½ tsp (2.5g) Red pepper flakes
- 1 tbsp (15ml) Fresh lemon juice
- ½ cup (120ml) Reserved pasta water
- 3 cups (90g) Fresh baby spinach
- 2 tbsp (8g) Fresh parsley, chopped
- Salt and black pepper to taste
Instructions:
- Bring a large pot of salted water to a rolling boil. Add the pasta and cook until slightly under al dente (1–2 minutes less than package directions). Reserve 1 cup of starchy pasta water before draining.
- Heat sun-dried tomato oil in a large skillet over medium heat. Sauté sliced sun-dried tomatoes for 2 minutes until softened and fragrant.
- Stir in minced garlic and red pepper flakes; cook for 60 seconds until garlic is golden.
- Pour in heavy cream and bring to a gentle simmer. Reduce heat to low and stir in grated Parmesan cheese, whisking constantly until the sauce is smooth.
- If the sauce is too thick, whisk in the reserved pasta water 2 tablespoons at a time until the desired consistency is reached.
- Toss the drained pasta into the sauce. Remove from heat and fold in fresh baby spinach and lemon juice, tossing until the spinach is just wilted.
- Garnish with chopped fresh parsley and season with salt and black pepper to taste.
