Ingredients:

  • 2 lbs fresh peaches, peeled and diced
  • 1 tbsp fresh lemon juice
  • 2 tbsp honey
  • 1/4 tsp salt
  • 2 cups heavy cream, chilled
  • 1 cup whole milk, chilled
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract

Instructions:

  1. Place the diced peaches, lemon juice, honey, and salt into a saucepan over medium heat.
  2. Simmer for 10–15 minutes, stirring occasionally, until the peaches have broken down and the liquid has reduced by about one-third.
  3. Transfer the mixture to a blender and pulse until completely smooth.
  4. Chill the peach puree in the refrigerator for at least 2 hours.
  5. In a large mixing bowl, whisk together the chilled whole milk and sugar until the sugar is completely dissolved.
  6. Stir in the heavy cream and vanilla extract.
  7. Slowly fold in the chilled peach puree, whisking until the color is uniform and the mixture is a pale, creamy orange.
  8. Pour the mixture into a frozen ice cream maker canister and churn according to manufacturer instructions (usually 20–25 minutes) until it reaches a soft serve consistency.
