Ingredients:
- 2 lbs fresh peaches, peeled and diced
- 1 tbsp fresh lemon juice
- 2 tbsp honey
- 1/4 tsp salt
- 2 cups heavy cream, chilled
- 1 cup whole milk, chilled
- 1/2 cup granulated sugar
- 1 tsp pure vanilla extract
Instructions:
- Place the diced peaches, lemon juice, honey, and salt into a saucepan over medium heat.
- Simmer for 10–15 minutes, stirring occasionally, until the peaches have broken down and the liquid has reduced by about one-third.
- Transfer the mixture to a blender and pulse until completely smooth.
- Chill the peach puree in the refrigerator for at least 2 hours.
- In a large mixing bowl, whisk together the chilled whole milk and sugar until the sugar is completely dissolved.
- Stir in the heavy cream and vanilla extract.
- Slowly fold in the chilled peach puree, whisking until the color is uniform and the mixture is a pale, creamy orange.
- Pour the mixture into a frozen ice cream maker canister and churn according to manufacturer instructions (usually 20–25 minutes) until it reaches a soft serve consistency.
