Ingredients:
- 4 cups (600g) cooked chicken breast, diced or shredded
- 1/2 cup (50g) celery, finely diced
- 1/4 cup (40g) red onion, minced
- 2 tbsp (8g) fresh parsley, chopped
- 1/2 cup (120ml) mayonnaise
- 2 tbsp (30ml) fresh lemon juice
- 1 tbsp (6g) lemon zest
- 1 tsp (5g) Dijon mustard
- 1/4 tsp (1.5g) salt
- 1/4 tsp (1.2g) cracked black pepper
Instructions:
- Dice the cooked chicken into uniform, 1/2-inch pieces. In a large mixing bowl, combine the chicken, diced celery, minced red onion, and parsley; toss lightly to distribute.
- In a separate small bowl, whisk together the mayonnaise, lemon juice, lemon zest, Dijon mustard, salt, and pepper vigorously until the mixture is thick, glossy, and completely homogenous.
- Pour the dressing over the chicken mixture and gently fold with a silicone spatula until evenly coated, avoiding over-mixing to keep the chicken chunks intact.
