Ingredients:
- 1 cup (120g) whole wheat flour
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) light brown sugar
- 1/4 cup (85g) honey
- 1/2 cup (115g) unsalted butter, softened
- 1 tsp (5g) baking soda
- 1/4 tsp (1.5g) salt
Instructions:
- Cream together the softened butter and brown sugar until light and fluffy.
- Slowly stream in the honey, beating on medium speed until the mixture is velvety and well-combined.
- Whisk the whole wheat flour, all-purpose flour, baking soda, and salt in a separate bowl.
- Gradually fold the dry ingredients into the wet mixture using a spatula, stopping as soon as the dough comes together.
- Roll the dough between two sheets of parchment paper to a thickness of 1/8 inch (3mm).
- Chill the rolled sheet in the freezer for 10 minutes to firm up.
- Transfer the parchment to a baking sheet. Use a fork to dock the dough every inch and score the dough into rectangles.
- Bake at 350°F (175°C) for 12-15 minutes until the edges are a deep mahogany-colored gold.
- Let the crackers cool completely on the pan to achieve the final snap.
