Ingredients:
- 2 cups (250g) all-purpose flour
- 2 cups (400g) granulated sugar
- 3/4 cup (75g) unsweetened cocoa powder
- 2 tsp (10g) baking soda
- 1 tsp (5g) baking powder
- 1 tsp (5g) salt
- 1 cup (240ml) buttermilk
- 1/2 cup (120ml) vegetable oil
- 2 large eggs
- 1 cup (240ml) hot coffee or boiling water
- 2 cups (450g) unsalted butter, softened
- 6 cups (720g) powdered sugar
- 1/4 cup (60ml) heavy cream
- 1 tsp (5ml) vanilla extract
- 2 drops (0.1ml) orange food coloring
- 10 oz (280g) chocolate wafer cookies, crushed
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- Whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt until uniform.
- Add buttermilk, vegetable oil, and eggs to the dry ingredients; beat until smooth.
- Stir in the hot coffee or boiling water until the batter is thin and velvety.
- Divide batter between pans and bake for 30-35 minutes until a toothpick comes out clean. Cool completely.
- Level the cakes with a serrated knife. Layer the first cake, spread buttercream, and top with the second cake layer.
- Apply a crumb coat of frosting and chill in the refrigerator for 30 minutes.
- Apply the final layer of buttercream, leaving the surface slightly uneven to mimic rugged terrain.
- Carve a small mound or hole into the side of the cake to create a dig site.
- Fill the dig site and the top perimeter with crushed chocolate wafer cookies.
- Position toy excavators into the crumbs and pipe caution stripes using orange-tinted frosting. Add a number candle to the center.
