Ingredients:

  • 2 cans (20 oz each) canned pineapple tidbits, drained (6 tbsp juice reserved)
  • 0.5 cup granulated sugar
  • 6 tbsp all-purpose flour
  • 2 cups extra-sharp cheddar cheese, freshly shredded
  • 1 sleeve Ritz crackers (approx. 32 crackers), coarsely crushed
  • 0.5 cup unsalted butter, melted
  • 1 pinch ground nutmeg

Instructions:

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, whisk together the granulated sugar, all-purpose flour, and the 6 tablespoons of reserved pineapple juice until a smooth slurry forms without lumps.
  2. Fold the drained pineapple tidbits and the freshly shredded extra-sharp cheddar into the slurry. Stir until the fruit is evenly coated. Transfer the mixture into a lightly greased 9x9 inch baking dish, spreading it into an even layer.
  3. In a separate small bowl, toss the crushed Ritz crackers with the melted butter and nutmeg until the crumbs are evenly moistened. Sprinkle the topping generously over the pineapple mixture. Bake for 30–35 minutes until the edges are bubbling and the cracker topping is a deep golden brown.
