Instructions:
- Cut the fresh broccoli into very small, uniform florets no larger than the size of a nickel to ensure even dressing absorption.
- In a large mixing bowl, combine the small broccoli florets, finely diced red onion, shredded cheddar cheese, and crumbled bacon.
- In a separate small whisking bowl, combine the mayonnaise, apple cider vinegar, sugar, salt, and pepper.
- Whisk the dressing mixture vigorously until the sugar is completely dissolved and the texture is smooth and glossy.
- Pour the dressing over the broccoli base and use a silicone spatula to fold until every ingredient is evenly coated.
- Cover and refrigerate for at least 1 hour before serving to allow the vinegar to soften the broccoli and the flavors to meld.
