Ingredients:
- 3/4 cup extra-virgin olive oil
- 1 cup granulated sugar
- 2 tbsp fresh basil, very finely minced
- 1 tbsp lemon zest, finely grated
- 3 large eggs, room temperature
- 1/2 cup whole milk
- 1 tsp pure vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp sea salt
- 1 cup powdered sugar
- 2 tbsp fresh lemon juice
- 1 tsp warm water
- 1 tsp fresh basil, finely minced
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a large mixing bowl, combine the granulated sugar, lemon zest, and minced basil. Use fingertips to rub the zest and basil into the sugar for about 1 minute until fragrant and slightly damp.
- Whisk in the olive oil and eggs one at a time, beating vigorously after each addition to create a stable emulsion. Stir in the milk and vanilla extract until the mixture is smooth and pale.
- Sift together the flour, baking powder, and salt directly over the wet ingredients. Using a spatula, gently fold the dry ingredients into the batter until just combined.
